Ham Preparation

  1. Have your butcher score the skin of your ham
  2. Pat the skin dry or leave uncovered in the fridge for 48 hours
  3. Rub the ham with salt to draw out the moisture from the ham

Cooking Roast Ham

  1. Heat the oven to 240C fan
  2. Put the ham in the centre of a baking dish and bake for 40 to 50 minutes until you see the skin begin to crackle
  3. Reduce the oven to 200c and keep roasting for another hour to 1 hour and 20 minutes when the ham is ready the skin will be nice and golden brown
